Monster Cookie Cheesecake Recipe 

Cookie dough crusted Monster Cookie Cheesecake has M&Ms and chocolate chips. I paired my perfect chocolate cheesecake with a beloved biscuit!   

– ▢½ cup (1 stick / 113 g) unsalted butter, room temperature – ▢½ cup (129 g) creamy peanut butter, room temperature – ▢¾ cup (150 g) light brown sugar, packed – ▢1 large egg, room temperature – ▢1 cup (125 g) all-purpose flour – ▢½ cup (45 g) quick oat – ▢½ teaspoon baking soda – ▢¼ teaspoon kosher salt – ▢¾ cup (152 g) M&M candie – ▢¾ cup (136 g) semi-sweet chocolate chip – ▢2 tablespoons mini M&M’s, optional Cheesecake – ▢2 packages (8 ounces each) cream cheese, softened – ▢¾ cup (167 g) superfine granulated sugar, or granulated sugar – ▢¼ cup (57.5 g) sour cream, room temperature

Ingredients

– 1 teaspoon vanilla extract – ▢3 large eggs, room temperature – ▢½ cup (101.5 g) mini M&M’ – ▢½ cup (86.5 g) mini semi-sweet chocolate chip Topping – ▢½ cup (115 g) sour cream, room temperature – ▢2 teaspoons confectioners’ sugar Additional Toppings For Serving (Optional) – ▢whipped cream, optional for garnish – ▢¼ cup (51 g) mini M&M’s, optional for garnish – ▢chocolate syrup, optional for garnish – ▢¼ cup (43 g) mini semi-sweet chocolate chips, optional for garnish

Heat the oven to 350°F. Prepare paper baking sheets. Set aside. Beat butter for 1 minute on medium-high speed in a stand mixer basin with the paddle attachment.

Instruction

Add peanut butter and beat 2 minutes until smooth. Smoothly combine brown sugar for 2 minutes on medium-high. After each egg, mix 30 seconds and scrape dish.

Stop the mixer and add flour, oats, baking soda, and salt. Blend barely. Add M&Ms and chocolate chips. Save 1 ½ cups of cookie dough.

Drop 1 scoop of leftover cookie dough 2 inches apart on prepared baking pans. Top M&Ms optional. Bake the cookies for 10 minutes to soften centers and gently brown sides.

Transfer cookies to a wire rack after a few minutes on the baking sheet. Save cookies for cheesecake. 7-inch parchment springform. Place reserved cookie dough in a lined springform pan's bottom and halfway up each side. Set aside.

Smooth cream cheese with an electric or stand mixer whisk. Mix sugar. Mix vanilla and sour cream. Scrape basin sides creamy. Combine each egg slowly.

Combine chocolate chips and mini M&Ms. Cover Monster cookie dough crust with filling. Bake 70–75 minutes until cheesecake top is dry and brown. 

After turning off the oven, let the cheesecake cool for 1 hour with the door slightly open. Take the cheesecake out of the oven. Cool it completely at room temperature.

Mix sugar and sour cream. Apply to chilled cheesecake. Refrigerate 4 hours or overnight. Add whipped cream, M&Ms, chocolate syrup, chips, and reserved Monster Cookies before serving.
