For compote:In a medium saucepan, mix cherries, maple syrup, and salt. On medium, cover and slowly boil the mixture. Cook 15 minutes, stirring often and gently smashing cherries to release juices.

Put 2 teaspoons of cherry juice in a small dish or cup after cooking. Turn cornstarch into paste. Back in pot, simmer cornstarch slurry 2-3 minutes to thicken. Keep heated for serving.
